How Optipure can help protect your combi ovens and steamers

Steam equipment is very susceptible to Scale and Corrosion problems. It is difficult to get the most out of cooking with steam without careful consideration of water quality.  Optipure can help.

Water is nature’s solvent. It contains, to some degree, everything it can dissolve on the way to your tap. Some of the most common contaminants found in water are the cause of operating inconsistencies, costly repairs and energy waste with combi ovens, steamers, rack ovens, deck ovens and other commercial steam equipment. Here are a few important considerations when selecting the right water treatment for commercial steam equipment.

How does your equipment generate steam?

  • Boiler – A volume of water is contained within a boiler, steam generator or an open reservoir inside the oven.
  • Flash  Water is dispensed directly onto a heated surface and instantly vaporized or ‘flashed’ into steam.

Understand your water quality. To select the right water filter system and minimize problems with steam equipment you must understand a few basic characteristics about your water:

  1. Chlorine/Chloramines
  2. Hardness (scale)
  3. Chlorides

Below is a snapshot of these problematic contaminants and the OptiPure technologies that deal with them.


Chlorine and Chloramines are disinfectants that protect us from water-borne disease and other health risks, but they also promote corrosion in cooking equipment. Chloramines are produced when ammonia is mixed with chlorine. When required, Chloramines helps water treatment utilities manage disinfectant by-products (DBP’s), and remains in water distribution systems longer than chlorine.

The scale forming compounds of calcium and magnesium carbonate are found in most water supplies. The physics of generating steam results in the precipitation of these dissolved minerals which forms hard scale in boilers, valves and fittings; and on elements, cabinet walls and glass.

There are two fundamental ways to deal with Hardness:

  • Remove problematic minerals

OP and BWS models utilize reverse osmosis and TDS management to reduce hardness and achieve a favorable mineral balance.

  • Inhibit the potential of minerals to form scale

ScaleX2® - a non-chemical inhibitor technology that minimizes the formation of scale in ovens with a ‘boiler/steam generator’. ScaleX2 works best when the water in the ovens boiler/steam generator is drained and replaced on a daily basis. This is an automatic process with most ovens.

IsoNet® - a patented scale inhibiting technology that helps minimize the impact of scale ovens that use ‘flash’ steam generation. It also contains a corrosion inhibitor that helps guard against corrosion.


Chlorides are common, active ions of dissolved solids in water that can cause pitting and crevice corrosion. At high temperatures chlorides are particularly corrosive to stainless steel.  Chlorides can only be removed with a system that utilizes reverse osmosis.

  • OP and BWS models that utilize reverse osmosis can remove unwanted chlorides and achieve a favorable mineral balance.
